How are we doing? so sorry I've been away for some time now and guess what? I've been very strong but am getting better now. Wow ... I missed you all... feels so good to be back. After  my 3days break I came back with this lovely recipe, very yummy cake recipe for your weekend delight and I know you all will love it.

Excel sponge cake is the name of my delicious goodness above Lol. Any bakers dream or delight is to bake a very soft, fluffy and sweet not only a sugary cake.
A lot of questions like how do I make my cake come out from the oven very soft and fluffy, and Yes! I've been working on it until i got my desired result.

Excel sponge is used when baking. when you really need your cake to come out very soft and fluffy, you can get it in any confectionary stores around you.

Below is the recipe for a 6-inch cake I baked, you can increase your measurements when making 8 inches and above.


Ingredients

flour-------- 250g (sieved)

Butter -------200g

Sugar --------150g

Egg------------300g

Water ---------63ml

Excel sponge ---1 level teaspoon

Baking powder------ 2 Level teaspoonful

Flavour------------- 1 cap of the cover

Milk-------------------50g(dry preferable)


Procedure

Put on the oven and set it on a low heat while you cream and mix the cake, reason being that after mixing your cake, you shouldn't let the batter sit for too long before baking it.

Cream butter and sugar in a mixer bowl using the K beater or wooden stick and a bowl, if you dont have a mixer, cream until the mixture is creamy and lighter in colour as always.

Add the baking powder and sieve into a dry bowl.

Add excel sponge into the egg and beat it very well until it's properly beaten and white in colour

Add the milk to the 63 ml of water mix it very well and allow it to blend properly with the hand mixer.

Add half of the  mixture of the excel sponge and egg into the creamed mixture.

Then add half of the mixture of the flour and baking powder in the creamed mixture.
Continue mixing with the K beater of your mixer or try using a wooden stick.

Pour out from the mixture bowl to your own bowl then gradually fold in.

Add the milk and water solution folding in gradually, Then add the remaining egg and excel sponge mixture and keep folding in.

Add the flour and fold into a batter and pour into the greased pan or a pan lined with a baking sheet. But try and remember never to overmix your batter else it will become very strong.

Bake in a moderately hot oven of a medium gas mark or temperature.Slightly hot for about 30 to 45 minutes or you can always check by dipping a knife into the cake to know if it's fully baked

When the top middle part of the cake has a bouncy test by dipping a knife through the middle. if it comes out clean, then it's set , place on a wire rack to cool off.
